Food insecurity is associated with obesity which is considered as food insecurity-obesity paradox. The causal relationship and the mechanism that drives a food-insecure person to gain more weight is still unknown. In my study, I want to focus on psychological and physiological mechanisms that work as moderator/mediator in the relationship between food insecurity and obesity in first-generation college students who might suffer from food insecurity due to their financial insecurity. One possible explanation for this paradoxical link is unpredictability in life events, delay discounting (i.e., immediate versus delayed gratification), variability in eating time and the thermic effect of food. One of the exploratory aims of this study is to determine how food insecurity is associated with academic performance in first-generation college students.
